Creamy Chipotle Tequila Lime Shrimp


I absolutely love this tequila lime infused dish made with homemade chipotle sauce. You can see how I prepare it by going to my YouTube channel "Angel's Kitchen and Cocktails". I enjoy cooking dishes that are versatile and allow you to be creative. This is one of those dishes. Obviously, this is a Mexican themed dish because I am using chipotle sauce with hot chilies', tequila, serving with cilantro lime rice and pairing with a Margarita. Very Mexican. But you can easily make this an Italian themed dish by preparing a tomato sauce base, using Italian herbs like basil, oregano, parsley and add pasta. And, using wine :) You can even turn this into a New Orleans inspired dish using Cajun seasonings and seafood like crawfish and shrimp! The most important thing to remember is to have fun. Food essentially has no personality. You give your food personality. You make the dish special and your own.


Ingredients for Shrimp

- 1.5 lbs. large peeled and deveined shrimp with tails off and seasoned generously with kosher salt and pepper

-1 medium yellow onion, diced

-1 red bell pepper, diced

1 1/2 tbsp extra virgin olive oil

2 tbsp salter butter

2 to 3 tsp of all-purpose flour

2 cups whole milk

1/2 cup green onions sliced

Cilantro for garnish, chopped coarsely

Lime juice from 2 limes

1 1/2 shots of Patron Reposado Tequila


Ingredients for Chipotle Sauce

-3/4 cup Greek Yogurt

-1/4 cup Mayonnaise

-2 red chilies, sliced and seeds removed (you can scale back to one if you don't want as much heat)

-1 peeled garlic clove

-lime juice from 1 lime

-1 tsp salt

-1 tsp pepper

Instructions for Sauce

Blend all ingredients in a food processor, set aside

Instructions for Shrimp

-Preheat a large metal pan to medium heat.

-In a large bowl, add your shrimp. Pour in the tequila and lime juice and season to taste with kosher salt and pepper. Stir well. Let it marinate for 5 minutes.

-Add olive oil to pan. Once oil is heated, add onions and red bell pepper. Cook for 5 minutes, stirring occasionally until tender.

-Add butter. Once better is melted, add flour. Start off with 2 tsp. Stir to smooth out flour.

- Turn heat up to medium high. Add shrimp. Make sure shrimp are spread out evenly. Cook shrimp on each side for two minutes.

-Slowly stir in Chipotle Sauce followed by stirring in milk.

-Once sauce starts to boil, reduce heat to medium-low for a low boil. Simmer for 10 minutes uncovered until sauce is to desired thickness, stirring occasionally. Add in green onions and stir well. Serve hot.

*If you want your sauce thicker, add 1 tsp of flour to 1/4 cup of hot water and whisk with a fork until smooth and add to sauce.

-Serve with cilantro lime rice or rice of choice. Pair with a classic margarita.

Garnish with Cilantro
